Birthday Cake Protein Bites

These high protein bites are made with only six ingredients.

Made with only six simple ingredients, Birthday Cake Protein Bites have 13 grams of protein, making them a perfect bite-size snack, perfect to pop on-the-go!

To make this no-bake recipe in just five minutes, you’ll need:

  • Oats: Use oat flour, or use a food processor or blender to pulse rolled oats for a few seconds until smooth. Almond flour can be substituted for a gluten-free option!
  • Protein Powder: Whey protein is a high-quality protein naturally found in milk that is rapidly digested and absorbed, making it a convenient way to boost protein intake! I used 60 grams (two scoops) of marshmallow-flavored whey protein powder, but vanilla whey protein powder would be tasty, too!
  • Nut Butter: Use peanut butter or cashew butter for the best birthday cake taste! Almond butter also works well, or use sun butter for a nut-free option.
  • Cream Cheese: These no-bake birthday cake protein balls are stored in the refrigerator, so consider adding a few tablespoons of cream cheese—it’s delicious and ups the protein!
  • Maple Syrup: Pure maple syrup is my choice, but other sweeteners like honey or agave will work, too! Also add vanilla or almond extract, if desired.
  • Sprinkles: Any colorful sprinkles will do!

Drizzle with a simple homemade Greek yogurt glaze, made with vanilla Greek yogurt, powdered sugar, honey and meringue power (helps the glaze to set).

Prefer protein bars vs. bites? Roll the mixture into balls for protein bites or press flat into an 8×8 baking dish and cut into slices to make bars.

Ingredients
  

Protein Bites

  • 1 ½ cup oats
  • 60 grams whey protein powder two scoops
  • 1 cup peanut butter
  • ½ cup cream cheese softened
  • ¼ cup maple syrup
  • 3 tablespoons rainbow sprinkles

Yogurt Glaze

  • ¼ cup Greek yogurt vanilla flavor
  • ½ cup powdered sugar
  • 1 teaspoon meringue powder optional, helps glaze to set
  • 1 tablespoon honey

Instructions
 

Protein Bites

  • Add rolled oats to a food processor along with the whey protein powder; pulse until smooth. Skip this step if you are using oat flour. Add the ingredients to a small mixing bowl or the bowl of your stand mixer.
  • Next, add the nut butter, cream cheese and maple syrup. Mix until smooth. Fold in sprinkles at the end.
  • Roll the mixture into bite-size balls or press it into an 8×8-inch baking sheet lined with parchment paper.

Yogurt Glaze

  • Combine Greek yogurt and powdered sugar in a small bowl. Add meringue powder if using. Sweeten with honey.
  • Drizzle glaze over protein bites or pour over protein bars.

Notes

  • If you are not using whey protein powder, add 1/4 cup more oats.
