  • 1 cup peanut butter
  • ½ cup cream cheese softened
  • ¼ cup maple syrup
  • 3 tablespoons rainbow sprinkles
Yogurt Glaze
  • ¼ cup Greek yogurt vanilla flavor
  • ½ cup powdered sugar
  • 1 teaspoon meringue powder optional, helps glaze to set
  • 1 tablespoon honey

Method

Protein Bites
  1. Add rolled oats to a food processor along with the whey protein powder; pulse until smooth. Skip this step if you are using oat flour. Add the ingredients to a small mixing bowl or the bowl of your stand mixer.
  2. Next, add the nut butter, cream cheese and maple syrup. Mix until smooth. Fold in sprinkles at the end.
  3. Roll the mixture into bite-size balls or press it into an 8×8-inch baking sheet lined with parchment paper.
Yogurt Glaze
  1. Combine Greek yogurt and powdered sugar in a small bowl. Add meringue powder if using. Sweeten with honey.
  2. Drizzle glaze over protein bites or pour over protein bars.

Notes

  • If you are not using whey protein powder, add 1/4 cup more oats.
