Ingredients
  

For the Ground Beef

  • 2 tablespoons olive oil
  • ¼ sweet onion chopped
  • 2 cloves garlic minced
  • 1 pound ground beef cooked and drained
  • 1 teaspoon cinnamon
  • 1 teaspoon cumin
  • ¼ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon cloves
  • ¼ teaspoon allspice

For the Sweet Potatoes

  • 2 medium sweet potatoes peeled, cubed
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Bowl

  • 1 container of cottage cheese (16-ounce) divided
  • 1 cup hummus divided
  • 1 cup Greek yogurt divided
  • 1 cup feta cheese crumbled
  • ½ cup red onion diced
  • 1 pint cherry tomatoes halved
  • 6 green onions white and green parts chopped
  • Fresh parsley chopped

Instructions
 

  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the onion and garlic and sauté for 3 minutes. Add the ground beef, cinnamon, cumin, paprika, cayenne pepper, cloves and allspice, and sauté until the beef is cooked through. Drain the fat (do not put into the drain) and then set aside the beef.
  • Preheat the oven to 400°F.
  • In a large bowl add the sweet potato chunks, add the olive oil, salt and pepper, and toss until the sweet potato is coated.
  • Spread onto a baking sheet and put in the oven to roast for 20-25 minutes, or until the sweet potato is soft, flipping the sweet potatoes halfway through cooking. Set aside.
  • In four bowls, divide the cottage cheese, hummus, Greek yogurt, ground beef, sweet potatoes and top with the feta cheese, red onion, tomatoes, green onion and parsley. Sprinkle za’atar over the bowl (optional). Serve with pita or pita chips.
