Balsamic Berry Shortcakes with Greek Yogurt Whipped Cream

Balsamic Berry Shortcakes with Greek Yogurt Whipped Cream

Ingredients

Shortcakes:

  • 2 cups flour 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 cup sugar
  • 4 tablespoons butter (very cold and cut into cubes)
  • 1/2 cup Greek yogurt
  • 1/2 cup whipping cream

Balsamic Berries

  • 2 cups sliced strawberries
  • 1 cup blueberries
  • 2 tablespoons sugar
  • 2 tablespoons balsamic vinegar

Greek Yogurt Whipped Cream:

  • 3 tablespoons whipping cream
  • 3 tablespoons powdered sugar
  • 2/3 cup Greek yogurt
  • 1 teaspoon vanilla

Instructions

Shortcakes:

  1. Preheat oven to 400°F. Place flour, baking powder, salt, baking soda and sugar into the bowl of a food processor. Pulse to combine. Add butter and pulse a few times until butter is cut into flour mixture. Add Greek yogurt and whipping cream and pulse until mixture is combined into one solid ball.
  2. Pat dough out on floured surface to a rectangle that is about 3/4 inch thick. Using a 2 inch biscuit cutter (or a glass) to cut biscuits out and place on cookie sheet. Reshape dough and cut the rest of the biscuits.
  3. Bake in oven for 12 minutes or until lightly browned. Remove from oven and cool on wire racks.

Balsamic Berries:

  1. Place berries in a small bowl and sprinkle with sugar.
  2. Add balsamic vinegar and stir to combine.

Greek Yogurt Whipped Cream:

  1. Place the whipping cream in a small bowl.
  2. Beat whipping cream until medium peaks form.
  3. Add powdered sugar, Greek yogurt and vanilla and beat until stiff peaks form.

To assemble:

  1. Slice shortcake in half and place on a small plate or bowl, place a dollop of Greek yogurt whipped cream and top with berries.
  2. Top with the other half of the biscuit and additional Greek Yogurt Whipped Cream.
