Shortcakes
- Preheat oven to 400°F. Place flour, baking powder, salt, baking soda and sugar into the bowl of a food processor. Pulse to combine. Add butter and pulse a few times until butter is cut into flour mixture. Add Greek yogurt and whipping cream and pulse until mixture is combined into one solid ball.
- Pat dough out on floured surface to a rectangle that is about ¾ inch thick. Using a 2-inch biscuit cutter (or a glass) to cut biscuits out and place on cookie sheet. Reshape dough and cut the rest of the biscuits.
- Bake in oven for 12 minutes or until lightly browned. Remove from oven and cool on wire racks.
Balsamic Berries
- Place berries in a small bowl and sprinkle with sugar.
- Add balsamic vinegar and stir to combine.
Greek Yogurt Whipped Cream
- Place the whipping cream in a small bowl.
- Beat whipping cream until medium peaks form.
- Add powdered sugar, Greek yogurt and vanilla and beat until stiff peaks form.
Assembly
- Slice shortcake in half and place on a small plate or bowl, place a dollop of Greek yogurt whipped cream and top with berries.
- Top with the other half of the biscuit and additional Greek Yogurt Whipped Cream.
