Mediterranean Tuna Salad

Your favorite Mediterranean ingredients like feta cheese, olives and fresh vegetables are mixed with tuna and a Greek yogurt dill dressing. This works great for a protein-packed lunch on pita or over lettuce. This salad is a light option that will keep you feeling full. Bring it along to cookouts and get togethers!

Ingredients
  

Salad

  • 3 5-ounce cans of tuna drained
  • ¼ cup red onion chopped
  • 1 English cucumber diced
  • 1 15-ounce jar of artichoke hearts quartered
  • 1 cup roasted red peppers chopped
  • 1 celery stalk finely chopped
  • ½ cup kalamata olives halved
  • 5-6 green onion chopped
  • ¼ cup of resh parsley chopped

Dressing

  • cup Greek yogurt
  • 2 tablespoons extra virgin olive oil
  • 1 lemon juiced
  • 3 tablespoons fresh dill chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Combine the salad ingredients in large mixing bowl.
  • In a medium mixing bowl, combine the Greek yogurt, extra virgin olive oil, lemon juice, dill, salt and pepper and whisk to combine.
  • Serve the tuna salad as is, on a bed of greens, a sandwich or pita bread.
