Whipped Cottage Cheese

Creamy, light and filled with protein, this Whipped Cottage Cheese is the perfect dip to serve with crunchy vegetables, pita chips or as a spread on toast.

Ingredients
  

Plain Whipped Cottage Cheese

  • 1 container full fat cottage cheese 16-ounce
  • ¼ teaspoon ground pepper

Garlic Herb Whipped Cottage Cheese

  • 1 tablespoon extra-virgin olive oil
  • 2 garlic cloves
  • 2 tablespoons fresh parsley
  • 2 tablespoons fresh chives
  • 2 tablespoons fresh basil

Lemon Herb Whipped Cottage Cheese

  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1 garlic clove
  • 2 tablespoons fresh dill
  • 2 tablespoons fresh parsley

Instructions
 

For Plain Whipped Cottage Cheese

  • Add the cottage cheese to a high-speed food processor or blender along with the black pepper. Blend until smooth.
  • Taste and add more black pepper to taste.

For Garlic Herb Whipped Cottage Cheese

  • Add the olive oil, garlic, parsley, chives and basil with the cottage cheese and black pepper to a high-speed blender and process until smooth.
  • Taste and season with more salt and pepper to taste. If you want a thinner texture, you can add a tad more olive oil or lemon juice.
  • Serve in a shallow bowl with fresh herbs and crushed red pepper. Serve with fresh vegetables and pita chips.

For Lemon Herb Whipped Cottage Cheese

  • Add lemon juice and lemon zest, garlic, fresh dill and fresh parsley, along with the cottage cheese and black pepper, to a high-speed blender and process until smooth.
  • Taste and season with more salt and pepper to taste. If you want a thinner texture, you can add a tad more olive oil or lemon juice.
  • Serve in a shallow bowl with fresh herbs and crushed red pepper. Serve with fresh vegetables and pita chips.

Notes

  • You can serve this as a dip with veggies and pita, or try using it on toast with your favorite toppings. For example, try adding lemon whipped cottage cheese to toast, along with fresh strawberry preserves and a drizzle of honey.
  • Store the leftovers in an airtight container for up to 4 days.
