Banana Split Ice Cream Pops

These cool & creamy Banana Split Ice Cream Pops are made with just three simple ingredients — vanilla ice cream, cold milk and fresh fruit. They come together in no time at all with a little help from your blender. A perfect frosty treat!

The countdown to summer break is on in this house! I see lots of fun homemade popsicle-making in our summertime plans, starting with this recipe for these layered Banana Split Ice Cream Pops.

Not only are these ice cream pops fun and 100% kid-approved, but I can also feel good about treating my kiddos to these thanks to the high standards of safety and quality being enforced by our local dairy farmers. In a world where we seem to be constantly hearing about contaminated foods and recalls, it is reassuring to know that dairy foods are the among the safest and most highly regulated foods out there.

In fact, milk travels from the farm to your fridge is just 48 hours! Many tests are performed along the way to ensure that milk is safe and healthy, including before milk leaves the dairy farm, prior to it arriving at the processing facility and then again at the processing facility. At the processing facility, milk undergoes three steps — pasteurization, standardization and homogenization. Then, it finally arrives at your kitchen table.

These ice cream pops are a fun recipe to let the kiddos help with. Younger kids can slice the bananas and strawberries with a butter knife and help you put everything into the blender. Older kids can practically make these popsicles all on their own. In just a few hours, you all will be cooling off with these fruity and frosty ice cream pops!

Banana Split Ice Cream Pops

Ingredients

For the Pineapple Layer:

  • 1 cup vanilla ice cream, softened
  • 1/2 cup milk
  • 2/3 cup fresh pineapple, chopped

For the Strawberry Layer:

  • 1 cup vanilla ice cream, softened
  • 1/2 cup milk
  • 2/3 cup fresh strawberries, hulled and chopped

For the Banana Layer:

  • 1 cup vanilla ice cream, softened
  • 1/2 cup milk
  • 1 banana, peeled & chopped
  • Mini chocolate chips (optional)

Instructions

  1. Add the ice cream, milk and chopped pineapple to a blender. Puree until smooth. Pour into the popsicle molds and freeze for 20 minutes.
  2. Rinse the blender pitcher out and then add the ice cream, milk and chopped strawberries to a blender. Puree until smooth. Pour into the popsicle molds over top of the semi-frozen pineapple layer and freeze for another 20 minutes.
  3. Rinse the blender pitcher out and then add the ice cream, milk and chopped banana to a blender. Puree until smooth. Pour into the popsicle molds over top of the semi-frozen strawberry layer. Sprinkle mini chocolate chips over top, if desired. Freeze for at least another 2-3 hours or until frozen solid.
  4. To easily remove the yogurt pops from the molds, run each one in the mold under hot water for 5-10 seconds and then gently slide out.
  5. Keep any remaining yogurt pops in the freezer for up to one month.
